I have a 67 1/2 1600 with a 68 U20 engine with SU carbs. When I pull the choke lever out, it just pops back in. I would expect there should be some mechanism to overcome the return springs on the carbs so that the choke lever stays out when I pull it. Any help figuring this out would be appreciated.

If the choke is operating correctly when you pull out the choke rod you turn/twist the rod clockwise which should lock it in that position.

Some were pull to stay, others were twist to lock. Sounds like you have a twist to lock.
